“Carrageenan has two types of grades: food-grade and degraded. The food-grade version has been used for 100’s of years with numerous reviews for being a safe food ingredient. The degraded version has been found to be possibly harmful. The degraded carrageen is not used in the food industry and does not provide thickening properties. There is a misconception between food-grade and degraded options of carrageenan.
The concern about carrageenan is attributed to Dr. J. Tobacman, whose article mostly cites the degraded carrageenan. The degraded version has an ability to break down the acids in human stomach; however, there are no supporting studies that are based on human and animal studies. Dr. Tobacman based his studies on the reference showing colonic tumors in rats when 2.5-15% of carrageenan was consumed (based on total daily diet). If carrageenan is present in any food that humans consume, it only has about 0.01% of overall daily diet.
The experimental independent invitro studies showed no interaction between carrageenan and organ cells because it does not pass through the gut membrane.”
